Mushroom Features

Mushrooms are versatile wine-pairing partners, working especially well with Pinot Noir. The hearty flavors of mushrooms, simply prepared, are known to bring out the best in Pinot Noir. In fact, the Japanese concept of umami, a taste described as "savory," seems made for both Goldeneye and certain mushrooms, such as Shiitake. So whether used as an accompaniment or as the main ingredient, if the meal includes mushrooms, Goldeneye Pinot Noir is an ideal complement.

The formal cultivation of mushrooms dates back to Louis XIV in France. It was not until the late 19th century that mushroom production made its way across the Atlantic to the United States. Today, mushrooms are commercially produced in virtually every state, despite the fact that mushroom production is extremely labor intensive. Many people are intrigued by mushrooms' nutritional and medicinal properties, in addition to their culinary appeal.

There are many types of mushrooms that can be used in cooking. The following are a sampling of widely available species that pair well with Goldeneye Pinot Noir:

Black Trumpet mushrooms are incredibly rich and buttery. They are excellent in vegetarian cooking, adding a richness and depth that is often the role of meat in a recipe.

Chanterelle mushrooms have a tender texture and flavor. They are great sautéed in butter with onions or shallots or for use in cream sauces.

Morel mushrooms are highly prized by mushroom hunters for their deep, woodsy flavor. Because of their earthiness, morels are often paired with cream or white wine sauces and milder flavored meats, such as veal or chicken.

Shiitake mushrooms are delicious breaded and fried, or added to vegetables and Asian soups. They make substantial contributions to stir fries, rice dishes and casseroles and are excellent grilled with meats.

White Button mushrooms have a mild flavor and firm texture and are commonly available whole or sliced. These mushrooms absorb flavors well in any dish. This versatility makes them a delicious addition to gravy, sauces, cream soups, stews, stir fry recipes or pasta dishes.
