Pinot Pairings
Cedar Plank Salmon
Serves 6
- 1 untreated cedar plank (about 17" x 10")
- 1 bunch of scallions
- 2 1/2 lb. center cut salmon fillet with skin
- Salt
- Freshly ground black pepper
Preheat oven to 350. Lightly oil the cedar plank and heat in the middle of the oven for 15 minutes.
Arrange scallion greens in one layer on plank to form a bed for the fish.
Put salmon, skin side down on scallion greens. Brush with olive oil and season well with salt and pepper. Roast in the middle of oven until just cooked through, about 35 minutes.
